Mango Chickpea Curry

Green curry with mango and chickpeas 🌶🌶🌶 ahhhhhmazing hot curry with a twist. I love this dish for a hot summers night 💃🏼💃🏼
Easy peasy recipe…
Green curry paste
2 shallots, chopped
Stalks of 1 coriander bunch, sliced
3 green chilies, sliced
1 small piece of ginger, skinned
2 handfuls of Basil leaves
3 tbs olive oil
1 tsp Himalayan sea salt
Blend til completely processed
1 onion, diced
2 garlic cloves, chopped
3 tbs green curry paste
2 small tins coconut milk
5 mangoes, flesh puréed
Garnish with spring onion and coriander leaves
Sauté onion and garlic and curry paste in a deep saucepan with olive oil until soft. Add milk and chickpeas. Simmer over low to medium heat reduce the liquid. Add puréed mango, heat through and serve with quinoa or rice, garnished and with a spoonful of coconut yogurt if you like.
