Buckwheat, Chia and Pistachio Porridge

Grain-free buckwheat, chia and pistachio porridge. Perfect for a rainy morning
That’s right, buckwheat is not a grain. It is in fact a seed and a complete source of protein. Porridge lovers give this a go.

½ cup buckwheat groats
1 tbs chia seeds
1 cup almond milk
1 tsp vanilla extract
1 pear, grated – skin on
1 small handful of pistachio nuts, chopped
1 small handful of shredded coconut
1 small handful of fat organic raisins
A drizzle of maple syrup if desired

In a bowl mix buckwheat groats, chia, almond milk, vanilla and sultanas. Cover and leave in the fridge while you sleep. In the morning add the grated pear and transfer to a saucepan. Cook over low heat for 7 minutes or until liquid has absorbed. Serve with more almond milk, pistachios, coconut, a banana if you like with a drizzle of pure maple syrup.
