A little on Kale…
Kale is packed full of vitamin K, vitamin A, vitamin C, vitamin E, manganese, magnesium, calcium, iron, omega 3 fatty acids, folate, stacks of fibre and antioxidants. Kale is considered the superstar of all the super foods, largely because it contains a cross section of anti-cancer agents. For instance it contains lutein, an antioxidant that fights disease. The yellow of the lutein is covered by the green of the chlorophyll. Chlorophyll oxygenates your cells – bonus! So, chlorophyll helps your body to detox, as oxygenation of the blood allows the body to clean itself more efficiently. And to top all of that, it also contains sulphorane, which encourages the liver to release agents that detoxify and prevent cancer causing chemicals.
4 – 5 cups or one bunch of fresh kale, washed and trimmed
3 cloves of garlic
1 tablespoon of himalayan sea salt
1/2 cup of untoasted pinenuts, or raw walnuts – soaked overnight to release gases and aid digestion
Extra virgin olive oil, starting with one good lug – gage the quantity as you blend
In a blender, mix all ingredients until smooth. This will keep in the fridge for 5 days. Best served on pasta or zucchini noodles.
